From My Greek Kitchen: A Traditional Salad Recipe [3’ read]

Bursting with fresh, colorful ingredients, this simple yet satisfying salad encapsulates the essence of Mediterranean living, offering a taste of sunshine and a celebration of life's simple pleasures.
Just like a well-crafted piece of jewelry, a delicious Greek salad is all about the quality of its ingredients. Recipe: Traditional Greek Salad with Fresh Heirloom Tomatoes
Ingredients:
2 large heirloom tomatoes, sliced
1 cucumber, sliced
1/2 red onion, thinly sliced
1 green bell pepper, seeded and sliced
1/2 cup Kalamata olives
1/4 cup crumbled feta cheese (I have two or three brands that I can find here in Sammamish and I really like: Mt. Vikos, Trader Joes and Costco!)
2 tablespoons extra virgin olive oil (Gaea or Mythology & Kouzini are my go-to brands)
1 teaspoon dried oregano (I always bring some with me from my parent’s house)
Salt to taste
Instructions:
Gently wash the tomatoes, cucumber, and green pepper. Slice the tomatoes and cucumber into thick rounds. Thinly slice the red onion and green pepper.
In a large bowl, combine the sliced tomatoes, cucumber, red onion, green pepper, and Kalamata olives.
In a small bowl, whisk together the olive oil, dried oregano, and salt. Top with crumbled feta cheese and serve immediately.
Tips for the perfect Greek salad:
It is really important to use the freshest ingredients you can find.
Don't skimp on the olive oil - a good quality extra virgin olive oil is key!.
And remember, if you see a "Greek salad" with lettuce, it's not a Greek salad. It's just a salad! 😉
Variations and additions:
Add a handful of fresh chopped parsley for extra flavor and freshness
Include some capers for a briny touch
Use a combination of different types of olives
